Located on the Route des Rivières tourist circuit in Saint-Paulin, Mauricie, La Ferme du Loup was created in 2005 by taking over the maple grove originally owned by the Boucher family, some 100 years ago. Having never tapped maple trees before, Patrice relished the dream of exploring the possibilities offered by maple syrup. A wine lover, a first experience in maple sap vinification opened new perspectives for the project. For many years, part of the harvest was used to produce Sével Doux for personal consumption. The artisanal maple wine production permit was obtained in 2020, some fifteen years later.
Inspired by the reinterpretation of Nordic cuisine and the promotion of non-timber forest products, La ferme du loup, with Clara at the helm, has set itself the mission of showcasing Quebec's terroir to offer its customers a culinary experience that goes beyond the traditional use of maple syrup.
