Apple butter with Sével Doux

Try this apple spread, specially prepared for us by the À boire et à manger team during their visit to the farm. It's the perfect addition to the platter served to your guests.

30 ml butter
2 diced apples
80 ml maple syrup
150 ml of mild savory soap
100 ml of apple juice
5 g of agar-agar

 

Cook the apples in the butter until tender. Deglaze with the maple syrup and mild Sével without overcooking. Blend in a food processor at high speed until smooth. Return the mixture to the saucepan with the agar-agar and bring to a boil, whisking for one minute. Refrigerate for 4 hours. Blend again, adding liquid as needed, to make a spread. Keep refrigerated until ready to serve.
