Spiced Maple Roasted Nuts

70 gr. of butter
1 tsp ground cinnamon
1 tsp nutmeg
1 pinch of Espelette pepper (or cayenne pepper)
30 ml maple syrup (preferably very dark for its strong taste)
2 cups mixed walnuts, almonds, pecans, or pistachios
1 tsp sea salt

 

Preheat oven to 180°C. In a saucepan, melt the butter. Remove from heat and add the spices and maple syrup. Mix well. Add the walnuts and coat them well with the spiced butter. Spread the walnuts on a baking sheet and bake for 15 minutes (or until they begin to brown). Leave the oven door ajar during baking. Season with salt. Transfer the still-warm walnuts to a large bowl before serving.
