Soyable Sauce

François Chartier has always been an inspiration to us. When he published this recipe in his excellent book, Les recettes de Papilles et moléculaires, we quickly adopted it, adding our secret ingredient: maple syrup infused with Chaga.

250 ml of chaga-infused maple syrup
125 ml soy sauce

 

Bring the maple syrup to a boil and cook for 1 minute. Add the soy sauce and continue cooking for another 2 minutes. Jar immediately. Keeps for several weeks in the refrigerator.

According to Chartier: "It will be useful above all for your summer grills, whether they are meat, fish, shellfish or vegetables. In dessert mode, it can enhance a dark chocolate recipe like no other. Then it gives the harmonious note to some of our recipes in this book."
