Chaga Infused Maple Syrup

When François Chartier published his recipe for Soyable Sauce in his excellent bookRecipes from Papilles et moléculaires, we quickly adopted it by adding our secret ingredient: maple syrup infused with Chaga.
INGREDIENTS
250 ml of chaga-infused maple syrup
125 ml soy sauce
PREPARATION
Bring the maple syrup to a boil and cook for 1 minute.
Add the soy sauce and continue cooking for another 2 minutes. Jar immediately. It will keep for several months in the refrigerator.
